If you have no programming experience, I recommend aspen HYSYS. But if you have, Simulink can be a great tool.

It depends on what you want to simulate. In general, Aspen Plus or Aspen Hysys is the best for simulating vapor and vapor-liquid processes, like the ones present in refineries. Pro II is better if you want to simulate any processes involving solid handling. There is also very specialized software like Chemkin for complex chemical kinetics simulation, or COMSOL for finite element simulation of process units.
