It's the color code for whatever you or the operator have decided to display. And that will depend on how the image was acquired or maybe obtained combining two images to enhance the magnetic contrast. Depending on instrument and/or measurement mode more than one information may be recorded simultaneously even.
The rounded, staircase-like structures might be atomic steps on a pretty smooth crystal, contrast within the steps might represent information about the magnetic stray field (and hence domains). But that's pure speculation on my side.
You most probably will have to thoroughly study your instrument and evaluation software. MFM isn't quite the most easily interpreted kind of microscopy.
