This is an interesting question, so, artificial intelligence can effectively help us preventing the extinction of endangered plants and animals species, since around 1 million of animals and plants species are now threatened with extinction such as elephant and sea turtle. That's why AI may help protecting this species from poachers, but also save animals and plants from natural disasters such as fires in the forest and floods.

The very fundamental idea of machine learning is the exploitation of patterns from data. On the other hand, AI in its classical setting is concerned with the discovery and development of rules for computer based reasoning. In today's understanding this distinction between machine learning and AI is no longer very critical and in many situations machine learning is seen as a subfield of AI. Now let us come to your question. Machine Learning and AI can be used to exploits the different patterns of the habitats from the accumulated data and observations. The very key point is the availability of rich data sets about the particular interest. For example, the GPS tracks of different birds can be analyzed by regression for a particular type of birds or it can be formulated as a classification problem for different types of birds.
In general, there are so many opportunities in which the machine learning and AI can be used for habitats modeling.

It's important to conserve certain varieties of plants and animals under threat of being extinct as well as for Biomimetics. Further we can imitate interesting plant and animal behaviors in robots. For instance, drone technology is widely being used today to monitor plant and animal behavior for rescue purposes.
