The planar process is still the most use technology for the production of transistors. For industrial applications, the fabrication process is not changing significantly.

CMOS (including all variations up to 3D technologies like FinFET) is the "mass production process". Bipolar processes are in use for applications where CMOS does not apply or does not meet the requirements, but in significantly lower volumes.
And yes - for special applications processes for SiC and GaN substrates are building up.
CMOS technology is still used for industrial production. Everyday people are coming with new materials e.g. organic/inorganic. Organic technologies are cheaper and easier to fabricate in comparison to Silicon technology. There are some sophisticated technologies for III-V, II-VI materials and devices. But they are not widely used for large scale manufacturing. People want to make compatible all new materials and devices in CMOS technology because it is well established.
