Opium poppy is an important medicinal plant from which latex is collected for isolation of opium alkaloids. You may search literature on this highly investigated plant. Another commercial plant is rubber where latex is collected. You may search literature on this crop as well for possible answers to your question.

Many Euphorbiaceae plants exude milky substances, some of which were investigated for biofuel purposes.
