Operations research and applied mathematical optimization are applied to almost all fields, I will be graduating in some months and I've always been asking myself this question.. I've worked a little bit for a company in supply chain management, not having much experience I would love to have returns of other researchers :)

Hi, there are plenty of fields in which optimization is important : mathematical finance, structural mechanics, fluid mechanics, etc.. For example, I use optimization and optimal control in CNES for space trajectrory optimization.
An operations researcher is "employable" in many places, such as in enterprises where something needs to be scheduled: there are very many businesses out there, and there is always a scheduling to be done - ordering handling in warehouses, factory physics (i.e., production planning), planning maintenance in a factory or of infrastructure like roads, apartment houses, sewage pipes; work schedules in shops, assignments of classes to rooms in schools, facility layout in any enterprise - it's an endless list!

I'm sure you have not done all there is to be done in the business of scheduling - if we consider upcoming hot stuff like infrastructure for electrical vehicles - the design, capacity and topology of charging stations, for example, and smarter ways to handle recycling - which is quite surprisingly very basic, and with very little technology invested in it (like their design, placement, and the potential of a condition-monitoring technology which warns when the container for plastic is getting close to full. (I am sure they are to be found somewhere, but I certainly have not.) Let your imagination run wild - I am sure there are plenty to do in supply chain + sustainability.
