Not sure if just the affixes should be part of the course as so many words have Latin or Greek roots - I wonder if the impact of Latin, Greek (and maybe old French) plays in underpinning English words could be a focus?

Also, you mention "related" majors - surely all majors involve rich communication and the basis for our language could be of interest.

I don't know whether it is useful to talk about Latin or Greek affixes in English Language Teaching. However, they are very useful - especially for non-native students - to learn as prefixes will increase their vocabulary range as they change the meaning of a word, and knowledge of word pattern changes as a result of suffixes will help understand changes in pronunciation in many cases
