The strangeness of a particle is defined by the difference of the number of strange quarks and the number of strange antiquarks (see the link below). So, I don't think that Gell-Mann chose the strangenesses for mesons and baryons by different standards.

But why the Zero point of the meson Decuplet lies in the middle whereas the Strangeness line of Neutron and Proton has the value 0 (and not +1) ?
