Although this answer is from the 'old wives tales' lexicon, perhaps it could be because of the great increase in venous pressure with a prolific sneeze. There are numerous venous retes associated with the orb and increase pressure would cause them to swell, pushing the eyeball out. Closing the orbital fissure with obicularis oculi would prevent that.
