It sounds like you have identified several variables that could at least minimally influence student learning. Purely from an analytical standpoint, your options would be either:
1. Observe/experiment on one variable only (or one variable at a time) to control for confounding (outside) variables like sleep, genetics, diet, etc.
OR
2. Use an analysis that can account for multiple variables at once, like ANOVA.

After reading the answer of Jim Mariani I think the best option is his second one. All of the factors are interesting and worth investigating. I suggest focusing on a particular context, students with Special Educational Needs, Flipped learning, remote education, gamification practices, language learning, or any other particular context to bring new data and interesting insights about learning.
I think that all those factors have an impact on the educational quality. I couldn't say which one is more important because in all contexts is different. Recently I did research on motivation among college students. I found out that they are motivated to finish college because they want to have a better social position.
