ERA5 reanalysis data has four distinct variable domains such as atmosphere (surface), atmosphere (upper air), land (biosphere), and land (hydrology). However, I'm confused about which variable domain's data should I use to calculate the reference evapotranspiration?

Reference Evapotranspiration is calulated using mean daily air temperature at 2m height, therefore, you need to use the ERA5 product which provides air temperature at 2m height from the ground surface.
Now, since ERA5-Land data provides air temperature at 2m above the surface of land, sea or in-land waters; which is calculated by interpolating between the lowest model level and the Earth's surface, taking account of the atmospheric conditions. You may use ERA-Land product safely.
Do not forget to convert the temperaure values, which are in Kelvin, in degrees Celsius (°C) by subtracting 273.15.

eu venho trabalhando com a evapotranspiração calculado por diferentes métodos e utilizando dados meteorológicos do ERA5. Os dados do ERA5 são calculados por interpolação entre o nível mais baixo e a superfície da Terra, conforme as condições atmosféricas.
A depender de qual método irar utilizar para o cálculo da evapotranspiração, você pode baixar os dados das variáveis que irá utilizar. Atente-se as unidades que estas variáveis se encontram.
