I am working on my Phd and I aim to identify the most influencial factors of Quality of Service, in order to relate them and develop a method that would assess the service quality of at grade intersections (i.e. roundabouts).

It depends on the city you are working on, each city has it´s own requirements, never the less you may consult the methodology in the Highway Capacity manual (HCM - 14) qhere can find the parameters to be measured in order to calculate the LOS.
Quality of service in many road segment is usually influenced by not only geometrical aspects but also human behavioral. Thus far, most of traffic management and/or engineering guidelines were built based on technical aspects such as degree of saturation, or delay time determined statistically, influenced by geometrical and traffic characteristics, rather than based on the effect of human behavioral characteristics. For example: accident risk caused by inappropriate speed choices while apply weaving maneuver due to social-economic reasons (time saving, or even for sensation seeking purposes). Consequently, when using an average values to determine an indicator performance (such as acceptance level of V/C, delay time, or even speed limit), some drivers have a tendency to break the law due to believe that they could avoid crash or accident involvement due to their braking abilities, or level of familiarity with road/traffic/vehicle characteristics, obtained from their riding experience (riding frequency and/or duration of riding).
So, it might be better if you combine such technical and social-economic aspects to be an integrated and systematic quality of service indicator when design and/or evaluate a roundabout level of service.
