If you leave the various (yet still very active) mythologies aside and stick to actual science, many people answered your question with an increasing level of details during the last 2600 years (for an overview, see https://en.wikipedia.org/wiki/Spherical_Earth). That said, the science behind what you call "structure theory of planet Earth" is usually named "Geodesy" (have a look here: https://en.wikipedia.org/wiki/Geodesy).

But I've heard all manner of absurd explanations - the most common being "Refraction!" - uttered by people with a very shaky grasp of what it is that they are referring to.

Our scientific philosophers have a convincing argument that the dimensionality of our universe is potentially unlimited and the choice must be expanded to hyper-planes, hyperspheres, hyper-ovoids, hyper duo-decahedrons etc.
I can, with difficulty, see an argument for the earth as a zero dimensional point where your existence is the resultant of my awareness - or God's if you prefer that alternative.

My answer is science and research. So far I did not noticed that someone has developed effective calculations in astronomy, geodesy and navigation, without spherical trigonometry.
In short: a claim how Earth is flat is nothing else than a joke.
I am not navigator nor sailor, but can tell you how terrestrial navigation (modern or from middle age period) is based on spherical trigonometry.
