Using a Mass Spec, I have identified 2 fatty alcohols: '1-hexadecanol, acetate (C18H36O2)' and 'Octadecane, 1,1-dimethoxy (C20H42O2)'. I am wondering what nomenclature I can use to denote these compounds in publication?
I have seen fatty alcohols are generally named as eg. 'C16:2-OH'. Does this apply here?

I would recommend using the IUPAC names hexadecyl acetate and 1,1-dimethoxyoctadecane. The journal you are submitting the article to may have specific requirements for nomenclature given at their website under "information for authors."
You could use the short hand abbreviations for these compounds (16Ac, DMA 18:0); again the format to use may be specified by the journal you are sending the article to in their information for authors section.
