generally, one can assume that the folks working for the manufacturer of the respective microcontroller know all the details best. So, I would start with the literature provided by the manufacturer, first of all with the datasheet. Sometimes, one datasheet covers every detail of a microcontroller or a family of microcontrollers, in other cases there are a number of separate documents describing the timers, the interfaces, the ADC and so on of a family.

Depending on your learning style, you might prefer videos but in the case of datasheets you have to change your habits, I'm afraid. A video presenting a datasheet had to be interactive, so you can jump from topic to topic and choose levels of different depths, and I guess it would be still more complicated and time consuming to navigate through such a video than through a written text.

Provided you have experience with a programming language, preferable C, but are a beginner in the field of hardware oriented programming, I would not advise you to start with a dual core 32 bit microcontroller offering a host of features but with a relative simple one providing some timers capable of generating PWM signals, an ADC, and some synchronous (SPI, I2C) and asynchronous interfaces. You might even start with an ATmega328 on a cheap Arduino Nano board. But beware of the Arduino IDE; you would not learn anything that you could apply later on!

Each manufacturer offers development software, in most cases including a basic version free of charge.

Later on, when the need arises for high precision and/or floating point calculations you'll have to switch to 32 bit microcontrollers containing an FPU and perhaps more than one core.

On the hardware side, in order to drive an IGBT, for example, you'll just need a MOSFET driver like the 2EDN7524.
