I want to know if I could measure micelle size of milk and potentiel zeta from a frozen sample thawed just before the measure. Usually, samples are fresh but I need to freeze it.
First, you can measure zeta potential and size of milk micelles previously frozen and thawed if you have the device; the stability of these parameters will depend on the way you have do it: if you do it very quick (at a low tª) you can preserve the structure (as for Cryo-TEM samples); if not you likely will find differences before and after, but my advice is DO IT.
