My data collection was not exactly the same way as planned in my research methodology. i planned to do an explanatory mixed method research whereby quantitative data will be collected and a follow up on results received will be made. Instead the time I was given to engage with the respondents was one day and was not allowed to do a follow-up. this caused me to collect both quantitative and qualitative data in that given time.

It is rather common that initial research plans do not work out as expected. This is one of the reasons (apart from substantial changes of interest) why we need to adapt our research questions throughout our research projects. I am not aware of any literature that discusses this very point in isolation, probably because it is so common.
The important point is that you are aware of the limitations. Depending on your research question, you basically have two choices: Change your question or critically reflect on the limitations of your data and make them explicit.
This boils down to a thinking activity. There is no (and there can be no) fixed methodological rule, because all depends on the concrete project.

Please check whether the data collected is in line with the research objectives.deviation from methodology is fine until it justifies the logic of collecting the data for the same research objectives.
