I saw in Berlin Museums a lot of Arabic delightfull art.  The architecture, glass, metal, ceramic artworks and fabrics,  were characterized by precision and intricate delicacy. Incredible lines and harmony. I was particularly delighted  with ceramics, glass and architecture pieces. I made a lot of pictures.  Contact with Arabic works of applied art gives special aesthetic experience.

I think that the European-Western interest was also increased during XIXth century with the rise of Romanticism, a movement searching ways of creating the feeling of nation and looking on the mirror of non-european, but culturally very rich and attractive, traditions. They admired that world of the 'other', and contrasting with an 'other' is/was a way of creating an identity (see T. Todorov). Thus, for example, the painter E. Delacroix, or the american writer W. Irving (e. g. 'Tales of the Alhambra') reflected some of these picturesque traditions in a more broad and deep process of Orientalism, as the book with that title written by E. Said states.

Didn't you hear about the term "lure of the East". Think about it Ahmed, and to be Fair, not just the Islamic Architecture. The Egyptian as well as Mesopotamia Architecture was interested by a lot of photographers, painters and historical researchers, because they are the two oldest civilizations all over the world.

Second point is that the remaining architecture shows the power and development which has been reached by these civilizations.

Who study such powerful civilizations could deal with it as a mystery. One of the famous information poses an interesting Hypothesis that the "Anunnaki" are the Gods as described by the Sumerians, and they had "Android Beings" helping them, can you believe in such a thing?

Finally, if you want a specific answer about Islamic Architecture.

Lure of the East is the main reason for the attention of painters and photographers, among Europeans, because the charm of the East have many connotations, it does not indicate the strength of only architecture, but also the magic of the East seems to people who live in those buildings in the East and their habits and traditions.

But does that comes to mind is that the Europeans wanted to benefit from the progress of civilization in the Middle portray they took everything and draw even transmit it to their home countries?

I think this phenomenon is natural and logical. An artist should recognise, understand, learn and demonstrate what he thinks correlates the truth. The diversity of art is immense and what is different from our well known reality and culture may help us to find another interesting way. Of course, the exoticism itself has got its own attraction.

There was also a commercial interest: many merchants could sell oriental works of art and antiquities for a good price in Europe.

The basic reason I feel is that Islamic art was not merely religious in nature.  It was/is? much beyond that.    I do not think that most of the Islamic artists and painters were regarded as noble men of the society just as the Christians viewed their artists.  Because we hear of Picassos and Michelangelos from time to time as noble beings, gifted and talented with rare skills. Islamic artists, I may dare say like the Hindu artists, on the other hand made painting and sculpture their profession, which helped them in earning their livelihood - just as a farmer - and art was used so extensively in these two communities, right from cookware, clothing and home-decoration that it became just a social-(can we say cultural?) form of expression, which was followed by the entire Europe.
