The choice of scale selection depends on few things like 1. Nature of data to be collected 2. Purpose of Data 3. Statistical test to be used.

Liker scale collects ordinal data ( data with definite order but won't have absolute zero)

You can develop your own scale as per the need of the study and kind of question to be asked. you may ask the same question using different scales.

If you clarify what exactly you want to do may give proper thought

I personally prefer 5-point Likert scale, however there are practitioners who use 7 or 9 point Likert scale (for granularity) or 4 point Likert scale (for forced choice).
