Quantitative EEG based on the spectral measures is a standard tool. You might want also to pay attention to the EEG topography symmetry  indices showing how the hemispheres are involved .  Finally, cortical source  imaging and neural network analysis are great ( advanced ) tools.

Your continuous EEG recordings in a virtual reality environment is a rich area for potential research.  I'd start with a literature search. In fact, prior to my retirement a few years ago, I had a student who completed such a literature search.  The search could likely provide opportunities for hypothesis generation on your project. I would have done the search prior to conducting the experiment/data capture. You have suggest possible "analyzing frequency ....that might reflect relaxation".  You might also consider hypothesis that might be reflected in time locked EEG with the virtual environemnt.  As your recording setup offers so much opportunity, I'd strongly suggest you approach the analysis from a hypothesis framework. If I am able to locate my student's report & can obtain his consent, I will forward it to you.

i agree with Prof. Franklin Lue, as your experiment can measure and track a wide range of outputs.

- you might use this continuous  recording in virtual environment to record the participants' Engagement during different stages .

- you can record the cognitive load or attention over period of time

- you can also measure the emotion in general or only arousal.

there is a lot of  measurement you can get though the frequency analysis of the EEG bands, below some studies that perform such a measure.
