I am looking for maps that provide information such as: soil type, degree of saturation, and any other parameter that can be used to estimate infiltration rate.

If you want water content at different depths and soil profiles associated with each sample you will have to use a Mesonet that includes soil moisture. The Oklahoma Mesonet has this but it may not be in your study area. Ground sensors are at 5cm, 25cm, and 60cm. Here is a link just in case.
