I have recorded hologram is best on digital in-line holography technique. The distance between the objects and the sensor (CMOS sensor,taking from web cam) is typically 5 mm. The illumination source is LED ,that is placed at a distance of 5 cm from the sample and is filtered through a large pinhole having a diameter of 0.1 mm .
Do you have the PSF's(filter intensity patterns as recorded by the CMOS) too?
If you do have then you cross correlate it with the object holograms to get your reconstruction.

You can in principle model the light propagation through your pinhole to determine the point spread function of your set-up and then invert it, however, you will need precise values for all dimensions, including geometrical distances, pinhole diameter (which may not be perfectly round and smooth) and the wavelength of your illumination. If the LED is not monochromatic you need the wavelength spread as well. You also seem to have some dirt on your detector (particles in focus, without Airy discs).
