Texture has a few meanings: surface texture, crystallographic texture, tactile texture, color shown because of differences in opacity, granularity, etc. Sugestion by Dr. Raabe belongs to the crystallographic field meaning. Sugestion by Fanny Orlhac belongs to the interpretation given by biologists to live tissues characteristics. You may receive some answers from architects, fashion bussines (clothes), arts, etc.
A tool where you can use a polygon to extract texture features - in particular assessing surface roughness via fractals and other second order statisitics - computed on a pixel-by-pixel basis can be download from: http://www.mathworks.com/matlabcentral/fileexchange/44951-fractal-dimension.
It also works for a stack of images, where the you can compute the texture features in 3D (i.e. polygon mesh).
