As they are used in completely different applications, cement-based pastes and mortars are not being compared from a properties point of view.
I would like to ask is there any practical approach to change the mix design of paste (by adding sand), to achieve the equivalent fresh properties (flowability or even plasticity) in mortar ?

I don't think there's any direct approach to do this.
What you can try to do is to redo the mix design based on the specific gravity, and control the amount of water added. Based on the mix design, your quantity of water should increase, and you should be able to get a similar workability for the mortar compare to the paste. However, it will be hard to achieve the same plasticity
