The acid value is the number of mg of potassium hydroxide (KOH) required for neutralizing the free fatty acids in 1 g of the fat.

Expression of results:

AV=56.1*T*V/m (1)

V: number of mL of the KOH solution

T: normality of the KOH solution

m: mass (g) of the test portion (sample)

The sodium hydroxide solution is used if you do not have KOH. Then you should change the equation 1 and get the following expression:

AV=40*T*V/m (2)

V: number of mL of the NaOH solution

T: normality of the NaOH solution

m: mass (g) of the test portion (sample)

The FFA expressed as a percentage of the fatty acid that predominates in the oil is calculated from the following equation:

FFA (% fatty acid)=V.C.M /10∙P

Donde:

V: number of mL of the NaOH solution

C: normality of the NaOH solution

M: molar mass of the acid in which the result is expressed (fatty acid that predominates in the oil)

P: mass (g) of the test portion (sample)

To develop the experiment

· Dissolve in a beaker the oil sample with a mixture of diethyl ether and ethanol (95% (V / V)), in volume ratio 1: 1. Add three drops of phenolphthalein.

· In the burette place an aqueous solution of sodium hydroxide or potassium hydroxide (0.5 mol/L)

For example: to obtain a solution of sodium hidroxide (0.5 mol/L) you need to dissolve 5 g of NaOH in 250 mL of distilled water
