I am trying to set up an APSIM file with 8 different CRM groups for maize which were all planted on the same date. The idea is to see if varying CRM groups induces variation in yield of maize. Being fairly new to APSIM, I am not sure how to alter the maturity groups (CRM).

If you want simulate different maturity group maize culture of maize in APSIM, firstly you have to creat those culture in maize.xml ini file and try to adjust their respective phenological event by adjusting respective varietals parameters. Than try to adjust yiled and biomass ...You can use different ini file for different CRM of maize also. Thanks

Yes... At first you should creat those variety of maize in ini file and try to compare with observed phenological event. Maize APSIM DVS is between 1-10. So put the respective number in each observed phenological event. And run apsim simulation and compare with observed value.
