I came across a paper where they mentioned 1-D correlation between two images without any explanation for it. The height and width of the output was same as the input image.

As Aparna Sathya Murthy said, you can convert each image to a column or row vector, i.e 1D data.
convert 2D image into 1D image perform correlation as usual.
Example Matlab code:
X = imread('imagename'); %2D image
Y = X(:,:); % 2D image converted into 1D image
Z = corr(Y,Y1); %find correlation between 1D images
