I am interested in the dose distribution of certain structures, especially organs at risk.
I already made it to extract the surface dose of any defined structure from the DICOM structure set and the DICOM dose file.
Now I need to "unwrap" the 3D surface dose to a 2D matrix, which seems rather complicated.
Did somebody already do this and could help me out? Any matlab or python scripts are welcomed!!

Maybe their code will help you. After this step, converting the dimension of the matrix shall be a relatively easy task! You can just unwrap 3D matrix to 2D matrix with M(:, :, index) in Matlab or M[:, :, index] in python.
I am not familiar with the format of the Dicom file. If you understand its format, you may also directly use the I/O operation in python/matlab to read the meaningful data out.
I did this for tube-like serial organs (esophagus/rectum) by 'cutting' the organ ventrally, folding it open and stretching it so that the diameter is equal along the cranio-caudal axis. For bladder and prostate (excluding seminal vesicles), a Mercator projection was used. As long as your surface is 'star-shaped' (there exists at least one point inside, from where all vertices can be seen), this works well. Large distortions at the poles!
A bit cumbersome -I admit- but what to do when 2D publishing is mandatory...
