The scenario is that almost all respondents noted either 1, 2,3,4 or 5 for the Likert Scale like responses for a research project but one respondent noted 2.5 for a question. So not sure the best way to code this response which falls between 2 and 3. It would be a great help if you could please provide your expert advice.

If the sample is large, delete such responses from data, which is referred to a Data Editing in research methodology. Because such wrong answers or data entry errors are to be deleted/corrected before analysis. If the sample is too small, then reassure the response in tune with other responses or get it corrected from the subject.
