1-If you are working with floquet modes analysis you can do this easily, by changing the mode state of incident waves :

TE{0,0} mode corresponds to linearly polarized wave in the x direction

TM{0,0} mode corresponds to linearly polarized wave in the y direction

2-If you are not working with floquet modes analysis, then you can use simple plane waves excitation and you can also control your polarization state, Electric Field intensity, and so many others.....
