I suppose it does not make any difference for the instrument whether English is your students' second or third language really? Any instrument that measures motivation for EFL reading and listening would be fine. However, your construct of interest, i.e., motivation for EFL reading/listening, is quite specific. I wonder if there even are instruments for this particular construct in the earlier literature? If there are none, you could always adapt existing items from a similar test - or simply write new Likert-type items yourself (e.g., "I would like to understand other English speakers better", etc.).
Hello, you can propose pre-lessons and post-lessons quality questionnaires, where you evaluate their level of satisfaction, involvement and any perceived improvement. This is an interesting chapter:

Learning Motivation and Learning Achievement links. While questionnaires and/or interviews can provide you with "made-up answers", tests will validate. Sometimes, knowing what motivates students to learn is just not enough without knowing "is that true?" For example, once an interview "discovered" the intrinsic/extrinsic motivation (Y) of the students to learn X, I will provide them with Y. I will do pre and post-test (e.g. applying time series) to see whether the improvement on X takes place. I hope it helps.
