well in LCA in general (not only in SIMA), handcraft and hand labour are not modelled (big discussion for other day). IN the case of a kayak you should include all the supplies you require to build your functional unit as well as the transportation of those supplies. You can add machines, tools and infrastructures, considering how many units you could produce with them during their life service. This is usually a very small number. It is important to model the appropriated electricity mix to your country of study and the voltage that the machines use.

Your problem is very similar to the scenario where you have a blackboard and a chalk but not sure of what/how to write on the board.

Your blackboard is Simapro and the chalk is the Life cycle data that will be feeded in the models.

Creating manual process is not difficult. You may need to follow these steps

1. you should collect all the foreground data i.e. the inputs and outs related to manufacturing of 1 kayak unit.

2. The inputs which are not available in Simapro should be manually created. This is done based on secondary literature which gives you information on all the resources, energy inputs as well as emissions/process wastes etc. for the specific input. Or if your company/vendor/supply chain has that information then you need to collect from them and create the input.

3. You the process you have created in step 2 as an input to your kayak model.

Simapro tutorials can guide you to create manual process etc. The real key to your problem is the data. If you have the data, you can crack it easily.
