So to foster cultural awareness, you need to consider all the different aspects of culture that can influence your students' perceptions, attitudes and behaviours. These include: Race, Ethnicity,Religion, language, Economic etc. And these can be achieved by teaching a culturally inclusive curriculum.

Are you looking for specific answers, anecdotes and occurrences or data and research? I teach many cultural backgrounds and made some mistakes by ignoring the cultural background of my students.
To keep interest of audinece for whole 2-4 hours lecture, the merrit content is not enough. One needs some performing ability to wake up students with jokes, cases, stories etc. It is easy to hurt someone feelings while apealing to some experiences; holydays [not all can afford]; family [not all have happy families]; kitchen [different attitudes]; cultural events [differences in perception].
Cultural competence is very important if your goal is to ensure maximum learning and performance. Students from marginalized populations often have struggles that are invisible to the professor & other students. You cannot fix all those problems, nor does the student expect you to. But do not add to his or her troubles by not "seeing" the student. Sometimes a kid with many family or economic challenges can benefit greatly just by a little recognition and encouragement, acknowledgement. Just don't be indifferent, and let the student know that you are there to support their efforts so they are not afraid to ask you to make a slight accommodation on an assignment, for example.
Cultural sensitivity is extremely important . I say this having lived and taught in a multicultural country. Cultural competence would aid the teacher in the selection of topics , examples given thus enhancing teaching and learning. ..and even the jokes you make. A teacher's sensitivity goes a long way in the relationship one foster with students and the ability to motivate them . One example is the status of certain animals in particular cultures, for eg the pig is taboo to most Malay and Muslim cultures, the cow being a sacred animal in the Indian culture etc.
