I would try to solve your problem as follows:

For the Solar Distillation System (SDS) I would design a Digital Twin (DT) - an SDS-DT. The knowledge database of SDS-DT with Big Data Analytics (BDA) can determine the target values for the parameters of the SDS.

you can use IOT to supervise and control the water solar water distillation systems. You can search for the review papers for solar water distillation systems.

It is an evaporation condensation process using the solar radiation.

Since the IOT node contains microcontrollers interfaced to diverse sensors and connected to the internet Then the node can acquire the sensor readings and sends it to the control center of the solar distillatory.

The sensors can be temperature sensors, pressure sensors, water Level sensors ,..etc.
