Briefly, it is used to measure the active surface area. The more iodine that is adsorbed on the surface, the higher the iodine number and - in theory - the better the activated carbon will be as an adsorbent material.

Iodine number showed porosity of activated carbon
and is typically used to determine the pore size of the micro-pores and surface area.
Determination of iodine number (iodine adsorption) is a simple method to determine the porosity (in this case activated carbon).
To specify more detailed porosity can be use instrument surface area analysis (BET).
The higher the iodine number represent the higher of porosity or the surface area of activated carbon.
