I am working on interpolation based data hiding technique. These techniques generally hides secret data in the newly calculated pixels and keep the original pixels intact. And if the algorithm stego image are made available to public, how can we say that the stego images protects the secret data.

Simply you have to perform steganalysis on the stego and cover images.
There are several approaches for staganalysis such as blind or semiblind.
The question how the secret data can protect has be considered in data hiding, not limited to interpolation-based data hiding. I think it is better you understand why data hiding(steganography) has been emerging.
Interpolation are applied to predict a pixel value. The error in predicting the pixel is called interpolation/prediction errors. Data bits are implanted into these errors. Finally the errors are added with the interpolation value to form the stego values. This is a common process.
