I think for a satisfying answer to your question, you should elaborate your challenges as well as your research question and planned procedure.
In principle, the ethical implications of data collection did not change during the pandemic, so you could look into general information of data collection in research. And also - maybe you should ask your advisor directly? Especially because you said that you need this information for ethical clearance and requirements may vary between countries and universities.

It will depend if you still want to interview face-to-face or use something like an online medium such as zoom. Given the current situation, elderly people are not advised to meet and invite people outside the bubble to their homes. Using mediums like the zoom is a challenge as many elderly may not have the technical knowledge of using it. If there was somebody in their bubble who can help set up zoom for the interview, it will work. Recently I have seen people take this route with elderly people and when restricted by the ethics committee to travel for data collection.
Hi Abdalsalam, if you are conducting interviews, have you considered recorded phone calls? The recording is needed for transcription and coding. Many of the conference call companies provide services free. The participants phone the 800 number and this is easy for older adults because no knew technology is necessary, just a phone.
