I've recently conducted a study using the PEBL battery test progamme. I looked at the BCST, Tower of London, and the numerical stroop task. Can anyone guide me in how I should interpret the output files with the results for each of these and what they mean?

Usually the summary file gives you (most of) the commonly reported statistics in a crosstable.
You have to know well what dependent variables are you looking for on every task.
In the BCST you usually look for errors.
In the tower of london moves over time.
In the stroop task accuracy and time used per condition.
