You can use plot3 function in MATLAB.

plot3(x,y,z)

Thanks everyone! I had to use TriScatteredInterp (for actual 3d interpolation) and slice functions.

Thanks for sharing your findings. I didn'nt know about TriScattererInterp. My matlab doc (2014) say it will be replaced by scatteredInterpolant.
