I not sure if I understood your question. You want to know how to access the samples of each class in Matlab. Well, here is a short code to extract the pixel values in all bands and its respective label (class).

Pavia_img = struct2array(load('PaviaU.mat'));

Pavia_gt = struct2array(load('PaviaU_gt.mat'));

figure(), imshow(Pavia_gt,[]), colormap('jet')

Pavia_img_vect = reshape(Pavia_img, size(Pavia_img, 1)*size(Pavia_img, 2), size(Pavia_img, 3));

Pavia_gt_vect = reshape(Pavia_gt, size(Pavia_gt, 1)*size(Pavia_gt, 2), 1);

Then, you could use these matrices (Pavia_img_vect and Pavia_gt_vect) for further processing.

As per my query, i have pavia dataset which i downloaded as a .mat file from the given web location. They also given the classes such as water, tree, titles etc. I want to know how to exact these samples from the given dataset.

The number of samples are 42,776 out of the 7,83,640 points on the scene.

So there are a lot of points that are unclassified, 0.7 million or 740864 to be exact.
