Using macros is the easiest way to plot interaction impedance vs frequency in CST studio. Go to Home->Macros-> Solver->E-solver->slow wave user defined watch. Set the boundary conditions as periodic for Z axis and simulate. You will get your plot along with dispersion diagram, normalised phase velocity, normalised group velocity, and E-axis amplitude.
