The term "folkloristics" refers to the academic study of folklore.
Within the academic discipline there is a field of study called "occupational folklore" that would include its application to business models, although that application isn't the only focus of that field. I am not an occupational folklorist, and it has been many years since I was a student learning about fields of study within the discipline. But publications on occupational folklore by folklorist Michael Owen Jones come to mind as a good place to start.
There is a field guide and source book for graduate students in folkloristics with a chapter on occupational folklore (and extensive suggested bibliography) which may also be helpful:
The Emergence of Folklore in Everyday Life, ed. George Schoemaker , Bloomington IN: Trickster Press (1990, chap. 13).
These sources should inform you well, and lead you to more current writing on the subject of your inquiry.

Yeah, renowned folklorist Michael Owen Jones contributes like other eminent folklorists in folklore studies.
