Easy books to start with are in my opinion the Stimson (https://www.theiet.org/resources/books/rsna/siare.cfm?origin=/books-inspec) and specifically for MATLAB those by Mahafza (https://www.crcpress.com/Radar-Systems-Analysis-and-Design-Using-MATLAB/Mahafza/p/book/9781439884959) - they explain in relatively simple terms what a radar system is, and the book by Mahafza has also some examples of code.

Sir I think design of transmitter and receiver doesn't comes under signal processing. But if u want to design it first study the existing ones and evaluate comparison between them

I would recommend the monography Merrill Skolnik "Radar Handbook" for start - it's really encyclopedic. Since you are going to model transmitter and receiver, chapters 6, 10 and 11 (as in the 3rd edition) are relevant. Good luck!
