Wireshark gives you only status or snapshots of transmitted data but not flow of data. best practice to visualize real time data transmission/packet in Wireless Network is through NAM animator in NS-2 or NS-3 simulator.
I agree with Mr. Walikar. However, if you have implemented a real system, then how would you measure the data flow. You must need a software tool through which you can measure the data flow. If you are implementing something via simulation, NS-2 or NS-3 is quite better. I also use NS-3 for my work, which is simulation-based.
So, again, I think WireShark is one of the most useful software tools for measuring the real-time data traffic.
I am not sure if I understand, so, I think you need to first check the coverage. Secondly, it is interesting to do some layer 3 tests with sintetic traffic generators (like iperf), therefore, you can check throughput, packet loss, latency and other metrics.
As Mr. Walker has pointed out you can use network simulator NS-2 or NS-3. Since you are using at the gate level, it is important to measure the delay, throughput, latency and the effect of noise on the signal.
