i. Physical modification: the most frequently used method in hydrothermal treatment. It includes precooking and drying. In precooking granule structure is destroyed. Also the starch is partially gelatinized and the system of hydrogen bonds is broken.
Cellulose and starch are very similar. The both contained glucose as monomer. The only difference between them is cellulose has glucose units linked by glycoside linkage and starch has glucose units linked by alpha 1,4 linkage.
This can be explained further by saying by saying, in starch, all the glucose units are in the same direction, while in cellulose, each glucose successive unit is rotated 180 degrees around the axis of the polymer.
The modification can either be physical or chemical. Physical modification require preglatinization or heat moisture treatment and chemical require the use of chemical like NaOH, KOH....etc
