Biosensor or better nano-biosensors can be used to detect specific plant metabolite such as flavanols in tea/coffe by enzymatic oxidation or other oxidation reaction. I would like to know whether some specific type of oxidative enzyme can be used for detection of these bio-compounds? Or can these type enzyme be encapsulated with nanomaterials for specific response and signal enhancement? If so, what type of detector (electrical or optical) can be used for quantitative detection of these compounds? Please suggest.
You can try electrochemistry since flavonoid are (often) electroactive. Here one of my article about that: http://link.springer.com/article/10.1007%2Fs00604-013-0993-8 It is not really a biosensor but maybe it will help you.
We faced a similar problem and coated microgel/enzyme thin films onto conductive substrates (graphite or gold). Maybe you can adapt this approach to your system.
