I found in a solution of water pH 4 that adding both substances leads to loss of sorbic acid. pH was kept the same and no degradation occured without adding vit C to the solution. Literature states that vit C can prevent sorbic acid degradation but I found the opposite..

Water is water. If you have pH 4, you have something else present acidifying it but haven't mentioned what. Since you are finding different results from litterature, I believe more information is needed for a constructive answer to your question.
When you added vitamin C, it was ascorbic acid and not sodium ascorbate? Both are frequently referred to as vitamin C, which is why I always use chemical names only to avoid ambiguity.
