As far as I know, it can not be done in the field, you must take samples and submit them to compression tests, to calculate the internal friction angle.

There are empirical correlations available for which you can find an approximate estimate. You may check articles on RMR/SMR or may be a book on Rock Mass Classification Systems. Many of them are available on Internet.
