The book edited by Toth and Vigo is very good resource for the instructor.  However, it is probably not that useful as a textbook for undergraduate students.

Toth and Vigo have a fantastic textbook.

OR you can see the book by Zanjirani Farahani. There is a chapter about VRP which summarises in a nice way.
