I am studying edge computing but I could not find any information related to how many users is expected to serve and how much computing power has the edge node.
With edge node I refer to the entity close to the base station, not the CDN.

I recommend you to look at the published standards from ETSI on Edge Computing [1] (from committee ETSI-ISG-MEC). You will find architectures and protocols, use case descriptions, etc:

Giving an accurate number is challenging since it is totally case dependent. Based on my experience, implementing an edge-based anomaly detection, a rough calculation for the maximum number of nodes possible to communicate (minimum packet loss) with the central is calculated as (Warning: This is not written anywhere else and is my empirical relation):
Only in a fixed loop-time case with 'n' as the number of active nodes:
T1 = Loop time of each node
T2 = Time duration of transmission of an 'Event' by each node
T3 = Time duration of data transmission by a single node
T4 = Total time of other calculations + safty margin between communications
n < (T1-T3)/T2
For example:
T1 = 10 sec
T2 = 0.1 sec
T3 = 0.2 sec
T4 = 1.8 sec

Then n < (10-0.2 - 1.8)/0.1 = 80 nodes
If concurrency of communication is allowed the number can be even more.
Meanwhile, the time of transmission depends on the communication technology which is used. If it is Wifi is different than the case if it is slow LoRa communication.
